Ingredients

  • 4 large handfuls baby spinach (or mixed baby greens or arugula)
  • 4 small beets, roasted and sliced
  • 1 pink grapefruit, peeled and sectioned
  • 1/2 red onion, thinly sliced
  • 1/2 cup walnuts, chopped
  • Avocado oil or extra virgin olive oil, a few drizzles
  • Your favorite fruit vinegar (raspberry, muscat, or similar), a few drizzles
  • Salt and pepper to taste

Instructions

  1. Place a large handful of greens on each of four plates.
  2. Arrange sliced roasted beets, grapefruit segments, and thinly sliced red onion over the greens.
  3. Sprinkle each salad with chopped walnuts.
  4. Finish with a light drizzle of avocado oil (or olive oil) and a few drops of fruit vinegar. Season with salt and pepper to taste.

Notes

I like using a fruit-flavored vinegar for a bright, fruity contrast—orange muscat or raspberry vinegar are both excellent choices. If you don’t have avocado oil, extra virgin olive oil is a perfectly good alternative.
