  • 1 cup filtered water
  • 3 tablespoons honey
  • 5 sprigs of fresh thyme or basil leaves
  • 8 ounces sparkling water or ginger ale
  • 3/4 ounce Optional: non-alcoholic herbal spirit or substitute

Instructions 

  • In a small pot, combine peaches, filtered water, honey, and 1–2 sprigs of thyme or basil. Bring to a boil, then simmer 5–7 minutes until the peaches are soft. Remove from heat, let cool 5–10 minutes, and mash the peaches.
