Ready-to-Serve House Salad Mixes for Quick Meal Prep

Who doesn’t love a good salad prep? I do! Having delicious, healthy lunches ready in the fridge stops me from grazing all day and makes weekday meals so much easier.

Ready-to-go House Salads

Healthy salads you can assemble and store for quick lunches all week.
Course: Salad
Prep Time: 20 minutes
Cook Time: 17 minutes

Ingredients

  • romaine lettuce
  • purple carrots
  • cucumbers
  • diced cherry tomatoes
  • red onion
  • hard-boiled egg
  • roasted chicken breast (see directions below)
  • a cheese stick
  • your favorite dressing (ranch or balsamic are great)

Instructions

  • Preheat oven to 450°F. Drizzle fresh chicken breast with avocado oil.
  • Season the chicken with salt, pepper, garlic powder, and paprika.
  • Roast uncovered for about 17 minutes, until cooked through.
  • Remove from the oven and let rest covered in foil for 10 minutes — this yields juicy, tender chicken perfect for meal prep.
