Who doesn’t love a good salad prep? I do! Having delicious, healthy lunches ready in the fridge stops me from grazing all day and makes weekday meals so much easier.

Ready-to-go House Salads
Healthy salads you can assemble and store for quick lunches all week.
Course: Salad
Prep Time: 20 minutes
Cook Time: 17 minutes
Ingredients
- romaine lettuce
- purple carrots
- cucumbers
- diced cherry tomatoes
- red onion
- hard-boiled egg
- roasted chicken breast (see directions below)
- a cheese stick
- your favorite dressing (ranch or balsamic are great)
Instructions

Preheat oven to 450°F. Drizzle fresh chicken breast with avocado oil.

Season the chicken with salt, pepper, garlic powder, and paprika.

Roast uncovered for about 17 minutes, until cooked through.

Remove from the oven and let rest covered in foil for 10 minutes — this yields juicy, tender chicken perfect for meal prep.
