The Next Level of French Toast

French toast is a beloved breakfast classic: simple to make yet easy to elevate. With a crisp exterior and a tender, egg-soaked interior finished with a drizzle of maple syrup, it hits all the right notes. But it can be even more exciting—this gluten-free Cookie Crusted French Toast takes the familiar favorite to a whole new level.

Chocolate Chip Cookie Crust

Cookie Crusted French ToastOur family’s favorite gluten-free chocolate chip cookies are Goodie Girl Quinoa Chocolate Chip. They’re gluten-free and delicious—my daughter lights up when I bring out a go pack, and my husband has even picked these over other treats at events. Because everyone in my household would happily snack on them all day, I wanted to find a fun breakfast way to enjoy cookies. The result: a wildly popular Cookie Crusted French Toast.

Basking in cookie flavor for breakfast makes this a playful, crowd-pleasing dish. The cookie crust adds texture, sweetness, and a hint of chocolate that pairs beautifully with the eggy bread inside.

Making gluten-free Cookie Crusted French Toast is straightforward. You make a basic egg mixture, soak slices of gluten-free bread briefly, and press them into crushed cookie crumbs. There’s one key trick:

Instead of cooking the slices in a pan, bake them on a cooling rack set over a baking sheet in the oven.

Baking on a rack helps the toast cook evenly while keeping the cookie crust from burning. If you try to cook these in a skillet, the chocolate chips can scorch before the egg-soaked bread is fully cooked.

This recipe is also great for involving kids. My daughter loved crushing the cookies—place them in a zip-top bag and let little ones gently pound them with a toy hammer or rolling pin. It’s an easy, fun way to get everyone involved in making breakfast.

Even with the cookie sweetness, a light drizzle of maple syrup is a perfect finishing touch. It adds a familiar balance and brings out the best in the cookie crust.
