How to Make a Postpartum-Friendly Vengayam Poondu Sadam

Coarse crush
- 1/2 tsp fennel seeds
- 1/4 tsp cumin seeds
- 1/2 tsp pepper
- 25 small onions (shallots)
- 3 garlic cloves
Temper
- 1/2 bay leaf
- 1 clove
- Small piece cinnamon
- 1 tbsp sesame oil
- 1/2 tbsp chana dal
- 1/4 tsp mustard seeds
- 1/2 tbsp urad dal
- 1 red chilli (optional)
- 5 cashews
- 1 tbsp roasted peanuts (optional)
- Curry leaves, a few
- 1/2 tsp asafoetida
Small onion rice
- 2 cups cooked rice
- Salt, as required
- 1/4 tsp garam masala
- 1/2 tsp sundal podi (optional)
- 1/8 tsp turmeric powder
- 1/2 tsp ghee (optional)

Directions (Step-by-Step)
- Coarsely grind fennel seeds, pepper, and cumin.
- Add the small onions and garlic to the grinder and crush until coarse. Alternatively, finely chop them.
- Heat sesame oil in a pan.
- Add bay leaf, cinnamon, clove, mustard seeds, urad dal, chana dal, red chilli, cashews, peanuts, and curry leaves. Fry until the dals and nuts turn light golden and mustard seeds splutter.
- Add asafoetida and mix briefly.
- Add the crushed shallot-garlic mixture. Sauté on medium heat until the color changes and the raw smell reduces.
- Add turmeric powder and salt; sauté until the raw aroma disappears.
- Add garam masala and sundal podi (if using); mix for about 15 seconds.
- Reduce the flame to low. Add the cooked rice and gently mix so the spices coat the rice evenly. Cook for about 15 seconds to combine flavors.
- Finish with ghee, mix well, and turn off the stove. Serve warm.
