If you’d rather skip the homemade effort, this quick pizza-inspired gnocchi bake uses store-bought potato gnocchi and doesn’t require pre-boiling. From prep to table it takes about 30 minutes, making it an easy, comforting weeknight meal.

What You’ll Need To Make This Gnocchi Pizza Bake

Equipment:

  • 9×9 baking dish
  • tin foil

Ingredients:

  • pasta sauce (a sweet basil sauce works well)
  • shredded mozzarella cheese
  • baby spinach
  • pepperoni
  • potato gnocchi (store-bought)

How To Make This Easy Gnocchi Pizza Bake

1. Preheat the oven to 400°F (200°C).

2. In a 9×9 baking dish, spread a thin layer of pasta sauce across the bottom. Add a layer of shredded mozzarella, followed by baby spinach and a layer of pepperoni.

3. Scatter the potato gnocchi evenly over the layers, pour the remaining pasta sauce on top, then add more pepperoni and another generous layer of mozzarella. Finish with a few additional pepperoni slices if you like.

4. Cover the dish with foil and bake on the middle rack for 15 minutes.

5. Remove the foil and broil for about 5 minutes, or until the cheese is bubbling and the pepperoni edges are crisp to your liking. Keep an eye on it so it doesn’t burn.
