I was out of town and running low on my Udi’s gluten-free sandwich bread, so I decided to pick some up while I was away. I visited a Whole Foods in Napa, California, but I couldn’t find Udi’s. I examined several other gluten-free loaves, hoping to find a light, airy bread similar to Udi’s, but most were quite dense. Then I discovered Rudi’s gluten-free bread and thought, “This is light!” I didn’t use it immediately; instead I put it in my sister’s freezer and brought it home with me. I kept using my Udi’s until one day I finally tried the Rudi’s bread. The texture surprised me — it was just like regular white bread. The photo below shows how it looked. I used it to make a savory chicken salad sandwich, and it was excellent.

A simple, flavorful, savory gluten-free chicken salad that pairs perfectly with light, soft gluten-free bread.
Ingredients:
- 1 chicken breast, boiled
- 1 tablespoon gluten-free white vinegar
- 1 celery stalk, finely chopped
- 1/4 green bell pepper, finely chopped
- 2 heaping tablespoons mayonnaise
- 1 tablespoon gluten-free mustard (I used Grey Poupon)
- 1 teaspoon dried dill weed
- Sea salt and freshly ground pepper to taste
Instructions:
- Place the boiled chicken in a bowl and sprinkle with the white vinegar.
- Add the chopped celery and green pepper, then mix in the mayonnaise, mustard, and dill. Season with sea salt and freshly ground pepper to taste. Combine everything with a fork until well mixed.
- Spoon the chicken salad onto slices of Rudi’s gluten-free bread to make sandwiches, or serve the salad over a bed of greens.
