Often called the “caviar of the South,” pimento cheese is a beloved Southern classic. This version isn’t traditional, but it’s my favorite: smoky cheddar combined with spicy chipotle peppers creates a bold, unforgettable spread. I first tasted this combination as an appetizer at Parlor Market in Jackson, Mississippi. Although that restaurant is gone, the flavor stayed with me—so I recreated it at home.

Chipotle peppers are smoked, dried jalapeños typically packed in a tangy, slightly sweet adobo sauce made from puréed chiles, tomatoes, vinegar, onions, garlic and spices. You’ll usually find them in the international or Latin foods aisle at the grocery store. Their smoky, spicy flavor is what gives this spread its distinctive kick.
Ingredients and tools you will need
This spicy pimento cheese comes together quickly with just a handful of ingredients:
- 1 pound smoked cheddar, grated – If smoked cheddar is unavailable, extra-sharp cheddar is a fine substitute. Avoid pre-shredded cheese when possible; shredding fresh yields a smoother blend.
- 1 pound bacon, cooked and crumbled
- 8 ounces cream cheese, softened
- 4 cups mayonnaise
- 3–4 whole chipotle peppers in adobo, chopped – Use three for moderate heat; add more if you prefer spicier.
- 1 green onion, white and green parts, chopped
- 1 teaspoon chopped pimento peppers – Traditional pimento cheese typically includes pimentos; this recipe is flexible—add or omit to taste.
- Electric hand mixer or stand mixer (optional) – A mixer with a paddle attachment will create a smoother consistency, but you can also stir by hand or pulse briefly in a food processor.

How to make Chipotle Pepper Spicy Pimento Cheese Spread
1. Add the smoked cheddar, crumbled bacon, softened cream cheese, mayonnaise, chopped chipotle peppers, chopped green onion, and diced pimentos to a large bowl.
2. Stir or beat until ingredients are evenly combined. Use an electric mixer for a creamier texture, or mix by hand for a chunkier spread.
3. For best flavor, cover and chill the mixture for about two hours before serving to allow the flavors to meld. Serve with crackers, pretzels, fresh vegetables, or use as a sandwich spread.


Storage instructions
Keep the pimento cheese at room temperature for up to two hours when serving. Afterwards, refrigerate in an airtight container and use within five days. This spread does not freeze well.
Leftovers are delicious in stuffed potato bites, as a filling for sandwiches (classic white bread is a favorite), or served with celery, bell peppers, crackers, or fried green tomatoes.
