How to make an easy bunny cake- A Cake Decorating Tutorial

  • This bunny cake is made with buttercream for a soft, approachable finish. We recommend a crusting buttercream, which develops a light crust that helps hold details.
  • For the cake shown, we used our classic vanilla buttercream frosting recipe (no shortening). A fluffy vanilla buttercream works well too. Use the buttercream you prefer; rolled fondant over chilled ganache is an option if you like a firmer surface.
  • The bunny ears were formed from gum paste and dried for a couple of days so they would stand upright. Gum paste is ideal for pieces that need to dry firm; you can also use fondant mixed with tylose powder to speed drying and strengthen pieces.

A drying time of a couple of days is usually reliable, though humid climates can lengthen drying. Make an extra ear or two in case of breakage.

  • After the ears dried, we attached lollipop sticks to the back and adhered sugar pearls with piping gel for a decorative touch.
  • The cake itself is four 6-inch layers filled and frosted with buttercream, smoothed using a hot knife or hot bench scraper. This design adapts well to other cake sizes if you prefer larger or smaller versions.
  • We finished the top with buttercream flowers. Simple rosettes, fondant cut-outs, or ribbon roses are all sweet alternatives.

This cute bunny cake design is perfect for Easter celebrations, baby showers, and spring parties.

Ingredients

  • Four 6-inch layers of yellow cake frosted with two batches of classic vanilla buttercream.
  • Gum paste for ears (or fondant with tylose powder)
  • Bunny ear template
  • Sugar pearls
  • Piping gel
  • Lollipop sticks
  • Stacked and wrapped cake boards or a pedestal
  • Pink fondant for a nose (small heart cutter suggested)
  • Black fondant for eyes
  • Coloring gel: black, deep pink, yellow, leaf green
  • Piping tips: petal, mum, leaf, small round
  • Pink ribbon for a bottom border
  • Pink petal dust (optional) for rosy cheeks
  • Small paintbrushes for petal dust and piping gel
  • Rose nail
  • Miscellaneous: spatula, disposable piping bags, cake board, vegetable shortening, waxed paper

Instructions

MAKING THE BUNNY EARS

  1. Cut gum paste bunny ears using a template. Make extras in case of breakage. Allow 2–3 days to dry firm; drying times vary by humidity.
  2. Once dry, attach lollipop sticks to the back, then brush with piping gel and press on sugar pearls. Let fully dry before inserting into the cake.

THE CAKE

  1. Bake, fill, and frost the cake as usual.
  2. Chill the frosted cake, then smooth the buttercream using a hot bench scraper or hot knife. You can also freeze the cake for 10–15 minutes to firm the buttercream before final smoothing. A little texture is fine—this is a bunny cake!
  3. Add fondant or buttercream accents. For rosy cheeks, gently apply pink petal dust to the chilled cake; lighten strong dust by mixing with powdered sugar if needed.

Notes

This design works for any cake size. If you don’t have time to dry ears, make floppy fondant ears that drape down the cake sides as an easy alternative.
