Chocolate Peanut Butter Stuffed Dates Recipe for Decadent Snacks

I’ve been loving these chocolate peanut butter stuffed dates lately — they’re quick to assemble and make a perfect healthy treat when you want something sweet. This recipe is vegan, dairy-free, gluten-free and free of refined sugar.

You’ll need pitted Medjool dates, creamy or crunchy peanut butter, and semi-sweet or dark chocolate chips.

Start by making a small slit along one side of each date, taking care not to cut through the other side. Use a butter knife to fill the cavity with peanut butter. Arrange the stuffed dates on a tray and place them in the freezer while you melt the chocolate.

Melt the chocolate gently. I use a Thermomix® set to a low temperature so the chocolate doesn’t burn, but you can also melt it carefully in a microwave or over a double boiler. If you like, stir in a teaspoon of peanut butter with the melted chocolate for an extra-smooth coating.

Dip each chilled date into the melted chocolate and use two forks to lift and shake off any excess. Set the coated dates on parchment paper and transfer them to the refrigerator to firm up for about 10 minutes. Once set, they’re ready to enjoy.

Ingredients

  • 12 medjool pitted dates

  • 1/2 cup semi-sweet chocolate chips

  • 1/4 cup peanut butter

Directions

  • Slice the dates on one side and stuff with peanut butter using a butter knife. Place in the freezer to chill.
  • Melt the chocolate chips and 1 tsp peanut butter in a Thermomix® for 2 minutes on speed 3, or use a microwave or double boiler. Stir well.
  • Drop the dates in the melted chocolate and shake off excess using two forks. Place them onto parchment paper and chill in the fridge for 10 minutes to set.
