What is Buffalo Sauce?

Buffalo sauce doesn’t come from bison—the name refers to Buffalo, New York, where the sauce originated. It’s a smooth, buttery, spicy sauce built on a cayenne pepper hot sauce base. Most famously used on wings, buffalo sauce is what gives “buffalo wings” their signature heat and tang.

In this recipe we’re making buffalo chicken bites—small, bite-sized pieces of chicken that are easy to eat as finger food or with a toothpick.

Buffalo Chicken Bites in the Air Fryer

We cook these in an air fryer rather than deep-frying to cut cleanup time and reduce oil use. Air frying yields a crisp exterior while keeping the chicken juicy, and tossing the cooked pieces in a homemade buffalo sauce lets you control the heat level.

Recipe Notes & Substitutions

  • Chicken: Use boneless, skinless chicken breast or thighs—trim bones and skin and cut into 1-inch pieces.
  • Cornstarch: If you’re avoiding corn, substitute tapioca or arrowroot starch.
  • Heat: Ground cayenne adds kick; use smoked or sweet paprika to reduce heat, or adjust the amount to suit your taste.
  • Peppers: Ground black pepper works fine if you don’t have white pepper.
  • Garlic: Granulated garlic or garlic powder both add good flavor.
  • Oil: Olive oil is used to grease the basket; any neutral oil or nonstick spray will work.
  • Sriracha: If you need gluten-free ingredients, choose a gluten-free Sriracha.
  • Frank’s RedHot: This classic hot sauce is the base of traditional buffalo sauce and is recommended for authentic flavor.
  • Butter: Use dairy-free butter to keep the recipe dairy-free, or regular butter if that’s fine for you.

How to Make Buffalo Chicken Bites in the Air Fryer (Step by Step)

1. Whisk dry ingredients

In a large bowl, whisk together cornstarch, salt, ground cayenne, white pepper, and granulated garlic until well combined.

2. Coat the chicken

Add the diced chicken to the bowl and toss until each piece is evenly coated with the dry mixture and a little oil.

3. Cook in the air fryer

Lightly grease the air fryer basket and preheat the air fryer to 380°F (193°C). Arrange the chicken pieces in a single layer and air fry for about 15 minutes, flipping halfway through, until golden and cooked through. Be careful not to overcook to keep the chicken juicy.

4. Prepare the buffalo sauce

Combine gluten-free Sriracha, Frank’s RedHot sauce, and dairy-free butter in a small saucepan. Warm over medium heat, stirring until the butter melts and the sauce is uniform.

5. Toss chicken in sauce

Transfer the cooked chicken to the saucepan and toss to coat every piece. Heat for another 2–3 minutes so the sauce clings to the chicken.

Serve the buffalo chicken bites warm with vegetable crudités such as carrot and celery sticks. They’re also great with your favorite dipping sauce or served over rice for a simple meal.

Tips & Variations

  • Wings or tenders: Swap cubed chicken for wings or tenders if you prefer.
  • Vegetarian option: Use cauliflower florets in place of chicken for a meat-free version.
  • Alternate breading: If you don’t want to use cornstarch, try gluten-free flour, almond flour, or gluten-free panko.
  • Quick dinner: Serve the sauced bites over rice or a salad for an easy weeknight meal.
  • Make a dip: These flavors also work well in a buffalo chicken dip for dipping vegetables, breadsticks, or crackers.
