Weekly Dinner Plan: Recipes for the Week of October 21, 2019

I just finished another round of ProLon’s Fasting Mimicking Diet this week. It was my sixth time—three times last year and three times this year—and I continue to find it a remarkable approach to a modified fast. This week I’m heading to New York to spend time with my mom and to celebrate a big birthday with family. It will be a bittersweet milestone without my father, but I know he would want me to celebrate with loved ones. I’ll be testing Thanksgiving recipes at my mom’s house all week. Here’s your dinner planner for the week:

Meatless Monday: Lentil sloppy joes from my cookbook, served with classic coleslaw.

Tuesday: Sweet potato coconut soup, spice-rubbed wild salmon, and roasted carrots.

Wednesday: Turkey meatballs with pasta; alternatively serve with creamy polenta or spaghetti squash. Add sautéed greens using my Mexican-style method.

Thursday: One-pot farro with cauliflower and golden raisins, alongside roasted cherry tomatoes.

Friday: Broccolini sausage pizza, paired with an avocado Caesar salad (egg-free).

Saturday Lunch: Savory oats with kale, mushrooms, and walnuts—add a poached egg if you want extra protein.

Sunday: Mixed green salad with grapes, gorgonzola (or Roquefort), and almonds, served with a simple, no-fail roasted chicken.

To make the week easier, here are a few prep tasks you can do ahead:

Sunday

  • Wash greens, vegetables, and fruit
  • Peel and cube sweet potato
  • Cook spaghetti squash if you plan to use it
  • Mix the spice rub for the salmon or chicken

Tuesday

  • Form the turkey meatballs so they’re ready to cook

Thursday

  • Make salad dressings in advance to save time
