Canadian Thanksgiving at home means a table full of food and plenty of apple desserts. Fall is the perfect season for apples, and I love turning them into warm, cozy desserts that work for holidays, weekends, or even a weeknight treat.

This year I decided to make a galette instead of a pie, crisp, or crumble. It’s my first time making a galette and I’m totally converted. The rustic, free-form crust is forgiving and quick, and the result feels special without a lot of fuss. A savory galette sounds tempting for next time—roasted vegetables or squash could be delightful—but for now this sweet version hits the spot.

What I love most about this galette is that it’s free of refined sugar and kept very low in added sweeteners. The caramel comes from blended Medjool dates for natural sweetness and a rich texture. You can skip the optional coconut sugar entirely and rely on the natural sugars from the apples and dates.

I used a mix of almond flour and white spelt flour in the crust for a lighter texture and pleasant nutty flavor. If you prefer, you can substitute all-purpose flour or a gluten-free 1:1 blend. The almond flour adds a nice depth that balances the bright apples and date caramel.

Description

A rustic, vegan salted caramel apple galette made with a mix of spelt and almond flours and a naturally sweet date caramel. Light, seasonal, and low in added sugar.

Ingredients

Crust

  • 3/4 cup white spelt flour (or all-purpose or gluten-free 1:1 blend)
  • 1/2 cup almond flour
  • 1/4 tsp salt
  • 6 tbsp vegan butter (or regular butter, or solid coconut oil)
  • 4 tbsp ice cold water
  • 1 tbsp lemon juice

Filling

  • 1/2 cup Medjool dates, pitted
  • 1 tbsp water (for blending dates)
  • 1/4 tsp salt (for date caramel)
  • 2 large apples, cored and thinly sliced
  • 2 tbsp coconut sugar (or brown sugar), optional
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp cornstarch

Instructions

  1. Add the spelt flour, almond flour, salt, and vegan butter to a food processor and pulse until the mixture resembles coarse crumbs.
  2. With the processor running, slowly add the ice cold water and lemon juice. Pulse just until the dough comes together.
  3. Wrap the dough and chill in the refrigerator for 30–60 minutes.
  4. Remove pits from the dates and soak them in hot water for 2–3 minutes. Drain and blend with 1 tbsp water and 1/4 tsp salt until smooth to make the date caramel.
  5. Core and thinly slice the apples. In a bowl, toss the apples with coconut sugar (if using), cinnamon, nutmeg, and cornstarch until evenly coated.
  6. Preheat the oven to 400°F (200°C).
  7. Roll the chilled dough into a roughly 12-inch circle on a lightly floured surface and transfer to a baking sheet.
  8. Spread the date caramel in an approximately 10-inch circle in the center of the dough, leaving a 2–3 inch border for folding.
  9. Arrange the apple slices in a circular pattern over the caramel.
  10. Fold the edges of the crust up and over the apples, pleating as needed to create a rustic edge.
  11. Bake for 25–30 minutes, until the crust is golden and the apples are tender.
  12. Let the galette cool a bit before slicing and serving. A light sprinkle of flaky sea salt over the top enhances the caramel flavors.
