These bites are rich in amino acids and fibre, making them a useful snack for muscle recovery and sustained energy. Their combination of seeds, nuts and oats provides a balance of healthy fats, carbohydrates and protein, while dried fruits and blueberries add natural sweetness and antioxidants.
Ingredients
- 100 g / 3 ½ oz blueberries, fresh or frozen
- 50 g / 1 ¾ oz maple syrup
- 50 g / 1 ¾ oz coconut oil
- 100 g / 3 ½ oz rolled oats
- 25 g / 1 oz pumpkin seeds
- 25 g / 1 oz sunflower seeds
- 25 g / 1 oz chia seeds
- 50 g / 1 ¾ oz flaked almonds
- 25 g / 1 oz ground almonds
- 25 g / 1 oz raisins
- 25 g / 1 oz goji berries
- 1 tsp ground cinnamon
- 1–2 tsp acai powder or baobab powder (optional)
Instructions
- Place the blueberries in a small pan with one tablespoon of water. Bring to a gentle boil, then simmer until the berries break down and become soft and jam-like. Stir in the maple syrup and coconut oil and warm until everything is combined and glossy.
- In a large bowl, mix the rolled oats, seeds, almonds, ground almonds, raisins, goji berries, cinnamon and acai or baobab powder if using. Pour the warm blueberry mixture over the dry ingredients and stir until everything is evenly coated. The mixture will be sticky, which helps the bites hold their shape.
- Divide the mixture into 16 even portions and roll each into a compact ball using slightly damp hands if needed. Place the balls on a tray or plate and refrigerate for at least one hour to firm up before serving.
Notes
Variation: If you prefer a baked version, preheat the oven to 180°C / 350°F. Arrange the formed bites on a large baking tray lined with parchment paper and bake for about 12–15 minutes until lightly golden. Allow them to cool completely before serving. Baking will change the texture, making the exterior slightly crisp while keeping the centres tender.
Storage: Store the raw bites in an airtight container in the refrigerator for up to one week. For longer storage, freeze them on a tray and then transfer to a sealed container or freezer bag; they keep well for several weeks and can be thawed briefly before eating.
Make-ahead tip: Double the batch and portion into small containers to have grab-and-go snacks ready for busy mornings, post-workout refuelling, or for packing into lunchboxes.
