What ingredients you need to make this Marshmallow Fluff:

  • 1 tub (2 cups) fat-free Greek yogurt
  • 1 package sugar-free strawberry gelatin (Jell-O)
  • 1/2 cup boiling water
  • 1/2 cup ice-cold water
  • 12 strawberries, cut into chunks
  • 1 packet mini marshmallows (sugar-free)

How to make this Marshmallow Fluff:

  1. Place the package of strawberry gelatin in a large bowl.
  2. Slowly pour in 1/2 cup boiling water and stir until completely dissolved.
  3. Add 1/2 cup ice-cold water and stir to combine.
  4. Chill the gelatin mixture in the refrigerator for about 5 minutes, until it begins to thicken but is not set.
  5. In a separate mixing bowl, add the fat-free Greek yogurt.
  6. Using an electric mixer, whisk the yogurt on medium for 2–3 minutes to loosen it.
  7. Gradually pour the slightly thickened gelatin into the yogurt while continuing to whisk for another 2–3 minutes.
  8. Whisk for an additional 5–10 minutes, or until the mixture has roughly doubled in volume and becomes light and fluffy.
  9. Carefully fold in the strawberry chunks so they are evenly distributed.
  10. Gently fold in the mini marshmallows.
  11. Cover and refrigerate the mixture for a couple of hours to fully set and chill.
  12. Before serving, spoon the fluff into small ramekins or individual serving dishes.
  13. Return the ramekins to the refrigerator until ready to serve. Garnish with extra strawberry chunks and mini marshmallows if desired.
