How to make vanilla extract in the instant pot with just two ingredients. Homemade vanilla is delicious!

Instant Pot vanilla extract is a popular homemade gift idea, especially during the holiday baking season. When stored correctly, homemade vanilla extract lasts for years. Storing it away from light preserves its flavor, so amber or brown glass bottles are recommended to protect the extract from sunlight.

Homemade Vanilla Bottles for Gift Giving

Using 8-ounce amber glass bottles makes a beautiful presentation and helps protect the extract from light. Fill sterilized bottles, add a vanilla bean to each bottle for added flavor and visual appeal, and finish with a simple label for gifting.

Vanilla Beans To Make Vanilla Extract

Vanilla beans are typically sold as Grade A or Grade B. Both grades work for extract, but Grade B beans are often preferred for extraction because they are drier and yield a concentrated vanilla flavor. Choose whole, plump beans if possible; they will deliver the best aroma and flavor over time.

What Alcohol to Use for Vanilla Extract

Use a minimum of 80-proof alcohol when making vanilla extract. Vodka is the most neutral and cost-effective choice; it allows the pure vanilla flavor to shine without adding competing aromas. Bourbon or aged rum can also be used if you prefer a complementary background flavor, but these spirits will change the final taste profile.

This recipe uses vodka. There is no need to buy expensive vodka—an affordable, good-quality bottle works well for homemade extract.

How to Sterilize Glass Bottles for Vanilla

Clean, sterilized bottles are important to keep your extract pure and long-lasting. To sterilize:

  • Fill a large pot with water and bring it to a rolling boil.
  • Use tongs to lower bottles and lids into the boiling water, ensuring they are fully submerged.
  • Boil for about 5 minutes, then remove with tongs and set on a clean towel to air dry.
  • Once dry, fill bottles with cooled extract and secure the lids.

Other Items Needed

Besides vanilla beans, amber bottles, and alcohol, you will find these tools helpful:

  • A small funnel that fits the bottle opening for easy filling.
  • A large measuring cup or container with a pour spout for transferring liquid without spills.
  • Tongs for handling hot bottles and beans safely.

Simple Instant Pot vanilla extract using vanilla beans and vodka. The extract is ready to use in about two weeks but improves with time.

Ingredients

  • 1 bottle (750 mL) vodka (80 proof)
  • 10–15 vanilla beans, Grade A or B

Instructions

  1. Slice each vanilla bean lengthwise with a sharp knife and scrape out the dark seeds. You may leave beans whole after splitting or cut them to fit your bottles.
  2. Place the split beans and seeds into the Instant Pot and add the vodka.
  3. Seal the Instant Pot and set to Manual (high pressure) for 60 minutes.
  4. When the cooking time finishes, turn off the Instant Pot and allow it to naturally release pressure for about an hour. Do not leave it on the “Keep Warm” setting.
  5. Open the lid, use tongs to transfer a vanilla bean into each sterilized bottle for added flavor and presentation.
  6. Carefully pour the vanilla liquid into a large measuring cup or container with a spout.
  7. Use a funnel to fill each amber bottle. Allow the bottles to cool for 10–15 minutes before capping.
  8. Cap and label the bottles once they are fully cool.
  9. Store in a cool, dark place. Homemade Instant Pot vanilla will be usable in about two weeks, but flavor deepens and mellows over several months. This extract improves with age.

Notes

Homemade vanilla extract contains no artificial coloring, so it may look lighter than commercially colored vanilla. The aroma and flavor will intensify as it ages.
