  • 1 tablespoon olive oil (optional, use if your beef is extra lean)
  • 1 pound ground beef
  • 1 medium onion, chopped (about 1 cup)
  • 1 tablespoon garlic, minced
  • 1 cup green bell pepper, chopped
  • 1 teaspoon dry oregano
  • 1 teaspoon dry thyme
  • 1 teaspoon dry marjoram
  • 1 teaspoon dry basil
  • 1 tablespoon sweet paprika
  • 1 large carrot, chopped
  • 1 (15-ounce) can crushed tomatoes, undrained
  • 1 (14.5-ounce) can petite diced tomatoes, undrained
  • 16 ounces uncooked rotini or macaroni
  • 4 ounces cream cheese
  • 1 cup sharp cheddar cheese, grated
  • 1 cup milk

Instructions

  1. Preheat a heavy saucepan or Dutch oven over medium heat. If your ground beef is 85% lean or leaner, add the olive oil to prevent sticking.
  2. Add the ground beef, chopped onion, bell pepper, minced garlic, oregano, thyme, marjoram, basil, and paprika. Cook, stirring occasionally, for about 10 minutes or until the beef is browned and the vegetables are softened.
  3. Stir in the chopped carrot and cover the pot. Cook for 10 minutes so the carrot begins to soften.
  4. Add the crushed tomatoes and the diced tomatoes (with their juices). Cover again and simmer for 20 minutes so flavors meld.
  5. Remove the lid and reduce the heat to low to keep the sauce warm while you cook the pasta.
  6. Meanwhile, cook the pasta according to package directions until al dente. Drain well.
  7. Return the drained pasta to the pasta pot. Add the cream cheese, shredded cheddar, and milk. Cover and let sit on very low heat, stirring occasionally, until the cheeses melt and form a creamy sauce (about 10 minutes).
  8. Pour the pasta and cheese mixture into the meat and tomato mixture. Stir until everything is evenly combined. Serve immediately with crusty bread or a green salad.
