- Oyster sauce
- Cornflour / corn starch

Instructions
- Trim and cut the broccoli into small florets. Blanch them in boiling water until they are just tender, then transfer to cold water to cool and drain. Slice the spring onions into 2-inch strips. Peel and cut the ginger into matchstick-size pieces. Set aside.
- Place the sliced beef in a bowl. Add the sesame oil and cornflour (corn starch) and mix thoroughly to coat. Allow to marinate for about 20 minutes.
- Heat a wok or large frying pan with vegetable oil over high heat. Add the ginger and stir-fry briefly to release its aroma, about 30–60 seconds. Add the beef and cook, stirring, until it is nearly done.
- Stir in the oyster sauce and add the blanched broccoli. Continue to stir-fry until the beef is fully cooked and the broccoli is heated through. If the sauce becomes too thick, loosen it with a tablespoon or two of cold water.
- Remove from the heat, add the spring onions, toss to combine and serve immediately with plain steamed rice.

- 1 tbsp oyster sauce
- 1 tbsp cornflour / corn starch
- ½ tsp sesame oil
Instructions
