- 3 pounds chicken wingettes (or whole wings divided)

Instructions
- Preheat the oven to 250°F and move the oven rack to the lower-middle position. Line a rimmed baking sheet with foil and set a wire rack on top. Lightly spray the rack with nonstick spray.
- Pat the wings dry with paper towels. In a large bowl or plastic bag, combine the wings with baking powder, paprika, garlic powder, and salt. Toss thoroughly so each piece is evenly coated. Arrange the wings skin-side up on the wire rack.
- Bake on the lower-middle rack for 30 minutes to render fat and begin the crisping process.
