This baked blueberry and apple version is a trusted staple: straightforward to prepare, full of fruit, and warmly spiced with cinnamon.

Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup raw walnuts or pecans, chopped and divided
- ½ teaspoon baking powder
- ¾ teaspoon ground cinnamon
- ¼ teaspoon fine sea salt
- 1 cup milk of choice
- 3 tablespoons pure maple syrup
- 1 large egg
- 1½ tablespoons unsalted butter or non-dairy butter, melted and cooled slightly (or melted coconut oil)
- 1 teaspoon vanilla extract
- 2 small apples, peeled and chopped
- 1 cup fresh blueberries, divided
Instructions
- Preheat the oven to 375ºF. Grease a 2-quart baking dish with nonstick spray or a light coating of olive oil and set aside.
- In a medium bowl, combine the oats, half of the chopped nuts, baking powder, cinnamon, and salt. In a separate bowl or large measuring cup, whisk the milk, maple syrup, egg, melted butter (or coconut oil), and vanilla until smooth.
- Arrange the chopped apples evenly in the bottom of the prepared dish, then sprinkle half of the blueberries over the apples. Evenly scatter the oat mixture on top, and pour the liquid mixture over the oats. Finish by sprinkling with the remaining nuts and blueberries.
- Bake for 35 to 40 minutes, until the top is golden and the oats have set. Allow to rest for at least 5 minutes before serving to let the casserole firm up slightly.
Notes
*Melted coconut oil can be substituted for butter for a dairy-free option.
