Smoked chicken, tangy buffalo sauce, sharp blue cheese, and plenty of melty cheddar and cream cheese—this dip delivers bold flavor and satisfying creaminess. When made with smoked chicken and finished on the grill, it gains an extra layer of wood-smoke that elevates every bite.

This warm, rich dip is fantastic with tortilla chips or toasted crostini. Leftovers are versatile—try the dip as a topping for baked potatoes, stuffed into jalapeño poppers, or spread on flatbread for a quick pizza. For best results, smoke the chicken yourself; the smoky meat makes a noticeable difference compared with store-bought chicken.

After cooking the chicken, shred it thoroughly—meat claws or two forks work well. The measurements below are guidelines; you can easily adjust amounts to taste. If you love cream cheese, feel free to add a little more for extra richness.

What is buffalo chicken dip?

Buffalo chicken dip is a creamy mixture of shredded chicken combined with cream cheese, cheddar, blue cheese, buffalo sauce, and ranch (or Greek yogurt/ranch substitute). It’s essentially a deconstructed Buffalo wing in dip form—ideal for parties and a great use for leftover chicken. Instead of an oven or slow cooker, finishing the dip on the grill adds a subtle smoked note and a slightly charred edge that’s irresistible.

What to do with leftover buffalo chicken dip

Buffalo dip is often made in large batches, so leftovers are common. Here are practical ideas to use them up:

  • Use it as a burger topping—spoon onto burgers for spicy, creamy flavor.
  • Spread on flatbread or naan—top with extra cheese and bake briefly for a quick flatbread pizza.
  • Stuff jalapeño poppers—mix with diced jalapeño and fill for a spicy appetizer.
  • Toss with pasta—heat and stir into cooked pasta for a fast, comforting meal.

Can you overcook buffalo chicken dip?

Yes. Overcooking can cause the cheese oils to separate, leaving a greasy texture. Follow the suggested grill time and remove the dip once it bubbles and is heated through to maintain a creamy consistency.

What is buffalo chicken dip served with?

Tortilla chips are the classic choice: they’re light, salty, and perfect for scooping. Celery and carrot sticks are traditional accompaniments that add crunch and cool the heat, but chips or toasted bread give the best balance for this rich dip.

Can I freeze buffalo chicken dip?

Technically you can freeze it, but it’s not ideal. Freezing alters the texture of cream cheese, which can become crumbly, and repeated freezing of cooked chicken raises quality and safety concerns. For best flavor and texture, store leftovers in the refrigerator and consume within a few days.

How to reheat leftover buffalo chicken dip

The dip can be served cold straight from the fridge, but it’s best warm. Reheat gently: microwave on medium-high, stirring every 30–45 seconds, for about 3–4 minutes total or until heated through. Avoid very high heat to prevent the cheese oils from separating and creating a greasy finish.
