4 Ingredient Almond Butter Paleo Ice Cream: just 5 mins of prep & 4 ingredients for the creamiest almond butter paleo ice cream! No Churn, Vegan, Keto, Dairy Free.

Lately my family and I have been experimenting with low-carb ice cream for my mom, who needs to limit sugar and prefers filling, high-fat options. I test new keto-friendly recipes with her while keeping ingredients as whole and simple as possible, starting with a paleo base.

This 4-ingredient almond butter paleo ice cream quickly became a favorite. It’s incredibly easy: combine the ingredients, blend, freeze, and scoop. No ice cream maker required.

How to Make Almond Butter Paleo Ice Cream

Make this almond butter paleo ice cream without an ice cream machine in just a few steps.

Add Ingredients

Place everything in a food processor or blender: full-fat coconut milk, natural almond butter, your chosen sweetener, and vanilla or almond extract.

Blend

Blend until the mixture is smooth, scraping down the sides as needed to incorporate everything evenly.

Pour

Transfer the blended mixture into a freezer-friendly container, smoothing the top so it freezes evenly.

Freeze

Freeze for 3–6 hours, or until solid. For best texture, allow it to soften slightly before scooping.

Thaw & Scoop

Let the ice cream sit at room temperature 30–60 minutes, or until it’s soft enough to scoop. If you’re in a hurry, thaw in short microwave intervals in a microwave-safe container.

Creamy Paleo Ice Cream in 4 Ingredients

  • Full-fat coconut milk — the base that creates rich, creamy texture.
  • Natural creamy almond butter — unsalted. Homemade almond butter works great too.
  • Pure maple syrup or a keto-friendly sweetener of your choice.
  • Vanilla or almond extract for flavor.

How to Make It Keto

To make this recipe keto, replace the maple syrup with a low-carb sweetener. Start with the smaller amount suggested, blend, taste, and add more if needed. Popular keto options include liquid monkfruit drops, liquid stevia (use sparingly to avoid aftertaste), or a sugar-free maple-flavored syrup. Adjust sweetness to taste before freezing.
