One of the finest dining experiences in the greater Pebble Beach area is Aubergine, located inside L’Auberge Carmel. Under the direction of chef Justin Cogley, who trained with Charlie Trotter, the restaurant presents inventive, carefully composed dishes that highlight both local and international ingredients. Menus range from delicate treats like a Kumamoto oyster amuse-bouche with cucumber jelly and yuzu foam to complex entrees such as Monterey Bay abalone accompanied by pickled sea lettuce, alba mushrooms and an oyster leaf with Japanese plum. Another standout is Australian wagyu beef, served with smoked cherry jus, bay leaf and morels. The restaurant combines refined technique with thoughtful flavor pairings, and its wine list complements the menu selections, making it a memorable and consistently excellent choice for fine dining in Carmel-by-the-Sea.
