  • 3 pounds Anjou pears, cut into 1-inch chunks
  • 1/2 cup granulated sugar

  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch

Cake Topping:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons cold unsalted butter, cut into small pieces
  • 1/2 cup boiling water

Sugar Topping:

  • 3 tablespoons granulated sugar

Instructions

  1. Preheat oven to 400°F (204°C).
  2. In a large bowl, fold together the pears, granulated sugar, cinnamon, nutmeg, vanilla extract, lemon juice, and cornstarch until evenly combined.
  3. Pour the fruit mixture into a 9×13-inch baking dish and bake for 10 minutes.
  4. While the pears bake, combine the topping ingredients (flour, sugars, baking powder, and salt) in a medium bowl. Cut in the cold butter with a pastry blender until the mixture resembles coarse meal.
